Whether you're hosting a spooky Halloween themed shindig for friends or just looking to cook up a few treats to gorge on with your loved ones, these easy, freakishly delicious recipes are perfect for tonight's ghostly evening.
Bloody Beetroot Dip and Regurgitated Guac with Pitta Chips
Blitz up these super easy dips and watch the bloody, burgundy tones of fresh beets ooze out and the creaminess of a chunky avocado guacamole resemble zombie brains to create the perfect accompaniment to some oven-baked, quick and easy pitta chips! These can be created hours in advance and chilled in the fridge or whisked up pretty quick prior to serving.
Beetroot Dip:
Ingredients - serves 4
225g beetroot, cooked (can be boiled or roasted)
125g (1 cup) Greek-style yoghurt
1 tbs fresh lemon juice
1/2 tsp ground cumin
1/2 sp ground coriander
Salt & freshly ground black pepper
Method - Combine all ingredients in a food processor or blender after cooking the beets through and season to taste with salt and freshly ground pepper. If you prefer a coarsley chopped dip - chop the beets up in small cubes and combine with other ingredients depending on the texture that you prefer.
Avocado Guacamole:
Ingredients - serves 4
1 medium ripe tomato
2 avocados, very ripe but not bruised
juice 1 large lime
handful coriander, leaves and stalks chopped, plus a few leaves, roughly chopped, to serve
1 small red onion, finely chopped
1 chilli, red or green, deseeded and finely chopped (optional)
Method: Chop the tomatoes very finely and pulverise the pulp and put into a bowl. Halve and stone the avocados (saving a stone) and use a spoon to scoop out the flesh into the bowl with the tomato. Mix all the other ingredients into the bowl and mash together for a creamy outcome - or chop the avocado into small cubes for a chunkier version and simply stir. Place a stone in the center and cover with cling film to preserve the dip from browning, it can be removed later prior to serving. Garnish with the fresh corriander.
Pitta Chips:
Ingredients - serves 8
3 pitta bread loaves
Drizzle of olive oil
Salt
Method: Preheat the oven to 180 degrees and cut the pitta bread into triangles. Place on a baking tray and brush the pitta shapes with olive oil and sprinkle with salt. Bake in the oven for 10 minutes or until crispy and brown. Serve with dips. Voila!
Caramel Apples
Prepare for screams of delight with this very easy, yet pleasing recipe for caramel apples. There is absolutely no trick to concocting this super simple recipe, so what are you waiting for?
Ingredients - serves 10
10 red lady apples or granny smith apples
500g caramel squares (store bought)
10 wooden sticks/ skewers
Method: Insert a wooden stick into the washed apples and set aside on a baking sheet. Melt the caramel squares on low heat in a saucepan with 1/4 cup of water and cook until smooth, dipping the apples in whilst the caramel is hot and swirling for an even coverage. Let the excess caramel drip of and place on the lined baking sheet, placing in the fridge to harden for about an hour until caramel is set.
Banana Ghosts
These spooky banana ghosts are most probably too cute too count as a horrifying treat. The yummy combination of rich, milky chocolate chips and the creaminess of banana is not just easy peasy to create, but very scrumptious.
Ingredients - serves 10
5 medium - large bananas, cut in half
Packet of store-bought milk chocolate chips
Method: Place 3 chocolate chips pointy end down, near the rounded end of the banana halves with 2 for eyes and a the 3rd placed slightly below to create the gasping mouth shape. These can be frozen and taken out prior to serving to prevent discoloration of the bananas or created to serve immediately.
Creepy Crawly Cranberry Punch
Why not create a deliciously, refreshing Halloween punch filled with gruesome (more like gummy) creepy crawlies and cubes of coloured ice too? If you're looking for a naughty punch add the vodka and ditch it if you're making this for your little ones...
Ingredients
1L vodka
500ml cranberry juice
500ml orange juice
half a lemon
gummy snakes and worms
food colouring (any colour)
Method - Fill an ice cube tray with water and place a few drops of food colouring in each cube to create coloured ice cubes when frozen. Blue works best as it pops out amongst the bloody orange hue of the punch. Mix all the ingredients in a large punch bowl and garnish with the gummy sweets and ice cubes and perhaps throw in a few tricks such as fake spiders if you're feeling slightly mean and decorate the outside of the bowl with fake cobwebs. Ditch the vodka for the kiddies if you're a good enough parent.
